Coconut Sugar Banana Bread

Serves: 4 people

Total time: 1 hour


  • Large Bananas – 2 (mashed)
  • Coconut Oil – 1/3 Cup, melted
  • Coconut Sugar – 3/4 cup
  • Vanilla extract- 1 tsp
  • Eggs – 2, room temperature
  • Whole Wheat Flour – 1 1/3 cups
  • Baking Soda – 1 tsp
  • Salt – 1/2 tsp
  • Chopped Walnuts – 1/2 cup and 1 Tbsp for garnish


  • Prep your oven by preheating it to 350 degrees Fahrenheit. 
  • Meanwhile, take a large mixing bowl and add all dry ingredients, excluding walnut. 
  • Add Whole Wheat Flour, Salt, and Baking Soda. Mix well and set it aside.
  • Now, take two bananas, peel them and mash them in a bowl with the help of a fork. 
  • Once nicely mixed, keep the mashed bananas aside and prep eggs. 
  • Break open eggs in a medium-sized bowl and blend with a hand blender. 
  • Add coconut oil, minced bananas, vanilla extract, and coconut sugar into blended eggs and mix them until nicely combined.
  • Now, add the wet mixture into the bowl of dry ingredients and mix well. 
  • Once nicely folded, add in walnut chopped and mix. 
  • Keep aside the mix and prep the baking tin. 
  • Line it with baking paper and pour the mixture. 
  • Tap it on the kitchen counter to let the mixture settle well and release air bubbles. 
  • Garnish the top with leftover walnut and bake for 40 minutes. 
  • After 40 minutes, check with a toothpick. 

If the toothpick comes out clean, the banana bread with coconut sugar is ready. Serve it hot with tea or store it in an airtight container.
