Baked Cookies with Coconut Sugar 

Serves: 24-25 cookies

Total cook time: 25 minutes

Ingredients 

  • Unsalted Butter – 1 Cup
  • Organic Coconut Sugar – 1 ¼ Cup (Additional ¼cup for rolling)
  • Egg – 1 Large
  • Vanilla Extract – 2 Tsp
  • All-Purpose Flour – 2 ½ Cups
  • Baking Powder – 1 Tsp
  • Baking Soda – ½ Tsp
  • Salt – ¼ Tsp

Cooking Directions 

  • Preheat the oven to 375°F.
  • Meanwhile, take the baking tray and line it with parchment paper. 
  • Keep the tray aside and prepare the cookie dough. 
  • Take a large-sized bowl and add room temperature butter and coconut palm sugar. 
  • With a hand mixer, mix it until fluffy. It will hardly take 3 to 4 minutes. 
  • Later add in the vanilla extract and whole egg. 
  • Slowly add the all-purpose flour to the mixer and run the mixer on low. 
  • Mix everything until combined. 
  • Now, make small-sized balls of the cookie dough and keep them aside. You will be able to make roughly 24 to 25 even-sized balls. 
  • On a plate, spread the kept aside sugar. 
  • Gently coat all the cookie dough balls in the sugar and slightly flatten them on the baking tray lined with parchment paper. 
  • Place the tray inside the oven and bake for 10-11 minutes.
  • Watch out for cookies turning golden. 
  • Turn off the oven and allow the cookies to cool down.
  • Enjoy them with evening tea or store them in an airtight container for later use.
